It would be a straight out lie to say that Tess and I don’t crave comfort food. What would Friday nights be like without our pizza or pasta fix? Honestly, we really don’t want to know the answer to that! Yet, even comfort food devotees like us need a break for healthier options. A dish doesn’t always have to be loaded with meat or carbs to do comfort justice. Sometimes, all that it takes is a savory, flavor-loaded sauce to make a fresh seafood main a cozy meal.
Bowls are a perfect option when you simply crave an aromatic, satisfying dish that ticks all the boxes from healthy to hearty. Our new favorite is a Honey Garlic Salmon Rice Bowl, featuring salmon filets caramelized in a sweet and spicy sauce. They’re served over steaming bowls of jasmine rice, with roasted brussel sprouts and broccoli alongside. The salmon is crispy on the outside, tender on the inside, and perfectly paired with the lightly charred veggies. So, the next time you’re craving something warm and comforting, try this bowl. Honey Garlic Salmon Rice Bowls
Ingredients
- 1/2 cup soy sauce or Tamari *Tamari is GF
- 1/3 cup honey
- 1 tablespoon Gochujang *Use Sambal Oelek if you want it GF.
- 1 tablespoon grated ginger
- 2 cloves garlic, chopped
- 2 tablespoons extra virgin olive oil
- 1/2 pound brussel sprouts, halved
- 2 small head broccoli, cut into florets
- kosher salt and black pepper
- Jasmine rice *Prepare as directed.
Instructions
- Preheat the oven to 425° F. In a square baking dish, whisk together the soy sauce, honey, Gochujang, ginger, and garlic. Add the salmon and let sit.
- On a baking sheet, toss together the brussels sprouts, broccoli, olive oil, and a pinch each of salt and pepper. Bake 20 minutes, until the brussels sprouts are charring.
- Meanwhile, prepare Jasmine rice as directed on package.
- Put the salmon in the oven and bake for 5-15 minutes, until the salmon reaches desired doneness. Remove the vegetables, spoon the sauce over the salmon. Switch the oven to broil. Broil the salmon until crisping on top and the sauce is thickening. Watch close.
- Add rice to bowls, top with salmon, and vegetables. Spoon any remaining sauce over the salmon.
