We love making pizzas for a number of reasons, but the main – and most helpful – reason is that you can make it in the 11th hour and it’ll taste just as good as anything you would have labored over.

Made with ingredients you most likely already have in your fridge/pantry, this Gluten-Free Alla Vodka “DIY” Pizza brings the phrase “last-minute” to a whole new level. It starts with a simple Alla Vodka sauce, and then is topped with everyday cheeses such as Parmesan-Reggiano and torn Buffalo Mozzarella. Finish with dollops of pesto and you’re done!

Even if you don’t already have these elements on hand, the idea is that you can substitute like for like. So you might not have buffalo mozzarella, but you have burrata. Or maybe you don’t have heavy cream but you have a cream-alternative. Do you see where we’re going with this? Totally up to you, and totally good – as long as you stick to the basic formula 😉

Gluten-Free Alla Vodka “DIY” Pizza

Course Pizza

Ingredients
  

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup yellow onion, sliced thin
  • 1/4 cup tomato paste
  • 1/2 cup heavy cream
  • 2 tbsp vodka
  • 1 tsp red pepper flakes (add more if you like it spicier!)
  • 1/2 cup parmesan reggiano, grated
  • kosher salt and black pepper, to taste
  • fresh buffalo mozzarella, torn
  • Parmesan-Reggiano, to preference
  • Pecorino Romano, to preference
  • basil pesto

Instructions
 

  • Preheat the oven to 500 degrees F.

To Make the Sauce

  • In a large saucepan, heat the olive oil, garlic and onion over medium heat. Cook until soft. Add tomato paste and cook until it appears darker in color and a bit carmelized.
  • Add in the heavy cream. Add in the vodka and cook through until evaporated.
  • Remove pan from heat. Add in the red pepper flakes and stir until combined.
  • Add the parmesan cheese and season with salt and pepper. Remove sauce from the heat.

To Assemble

  • Once risen, pour the sauce overtop the dough and spread. Add the cheeses and dollops of pesto.
  • Place the pizza in the oven for 10 minutes. If after 10 minutes it’s still not golden brown around the edges and cooked through underneath, continue cooking in 5 minute intervals until it is cooked to your preference.

Moments Gluten-Free Pizza Dough

Ingredients
  

  • 1 cup warm water
  • 1 tsp Fleischmann's Yeast
  • 1 tsp honey
  • 2 1/4 cup Cup4Cup GF flour (or regular flour)
  • 1 tsp kosher salt
  • extra virgin olive oil

Instructions
 

  • Fill a glass measuring cup with warm water. To the warm water, add the yeast and honey. Stir to dissolve. Allow the mixture to sit for at least 4 minutes to make sure the yeast is alive. The yeast is done activating as soon as an inch of foamy bubbles appears on the surface.
  • Place the flour and salt in the bowl of an electric mixer fitted with a dough hook. Add the yeast mixture and mix on low speed until the mixture starts to come together. Using a spatula, scrape any loose flour on the sides into the center of the bowl. As soon as all of the flour has been incorporated, turn the speed up to medium and mix for 8 minutes without touching it. You can stop mixing when the dough pulls away from the sides and forms into a ball.
  • After the dough comes together, place it in a separate bowl that has been lightly coated in olive oil. Cover with a towel, allowing it to sit in a warm place for about 10 minutes. Knock down the dough after the time is up and toss it on your sheet pan. Roll out with a glass!
