In our eyes, there’s nothing quite like biting into a juicy burger on a hot day. A side of ketchup, crispy on the outside soft on the inside fries, and a bubbly pop on the side. Magic! But, add a delicious special sauce to the mix, double smashed patties, and two types of cheeses, and suddenly, you’re leveled up. That’s where we introduce Brian’s Smash Burgers with Special Sauce.

Created by our very own, Brian, it pays homage to classic burgers of the past, but with our own little twist. The sauce is comprised of pickles, onions, mayo, and ketchup, and you’re meant to slather it not once, but TWICE, between the layers of the burger.

The patties themselves are smashed on a hot grill, and make for the perfect bite. American and cheddar cheese overtop the juicy patties…wow. If you’re looking for that final touch, we like to butter our buns. Mainly because we love butter, secondly because it’s just really good. Brian’s Smash Burgers with Special Sauce

Equipment

  • 1 flat spatula

Ingredients
  

For the Burgers
  • 2 pounds 85% lean ground beef
  • 1/2 pound cheddar cheese slices
  • 1/2 pound American cheese slices
  • kosher salt and pepper
  • 4 burger buns
  • 4 tablespoons butter
For the Sauce
  • 1 sweet onion, diced
  • vegetable oil
  • kosher salt
  • 1 cup mayonnaise
  • 1/2 cup ketchup
  • 1 dill pickle, diced
  • kosher salt and black pepper

Instructions
 

Sauce Method

  • Dice the onion and pickle. Set each aside.
  • Heat a sauce pan over medium-high heat with just enough vegetable oil to coat the pan. Once the oil is hot, add onions and toss to coat. Sear until the onions become translucent. Add salt to taste and set aside to cool.
  • In a medium bowl, add all ingredients and whisk to combine.

Burger Method

  • Add ground beef to a bowl and divide into eight equal pieces and form into balls.
  • Cut the buns in half. Melt butter in a pan large enough to hold each half of the four burger buns. Toast lightly. Set aside.
  • Heat pan over medium-high heat. Once hot, add four. of the burger balls. Using the flat side of a spatula, smash each burger patty. Season with salt and pepper. Sear for two minutes. Flip and top each with a slice of cheddar cheese. Sear two more minutes.
  • On the bottom buns, add a generous spoonful of the sauce and top each with the first patties.
  • Add the remaining four burger balls to the pan. Using the flat side of the spatula smash the burger patties. Season with salt and pepper. Sear for two minutes. Flip and top each with a slice of American cheese. Sear for two more minutes.
  • Add the second patties on top of each of the first patties. Top the second patties with another generous dollop of sauce, and the top buns.
