Watermelon Mojitos

Ingredients
  

  • 30 large, fresh mint leaves coarsely torn by hand
  • 3-4 thick slices of fresh watermelon
  • 12 oz light rum, such as Bacardi or NA rum, such as Rumish
  • 1/2 cup homemade simple syrup
  • 6 tbsp freshly squeezed lime juice (from about 3 limes)
  • sprigs of mint, for serving

Instructions
 

  • Crush the mint leaves lightly with the back of a spoon, to release the oils. Slice your watermelon into cubes and place in a food processor or blender. Purée.
  • Add the mashed mint into a large pitcher with the 2 cups of puréed watermelon, the rum, simple syrup, and lime juice. Stir to combine.
  • Pour over glasses filled with ice and garnish with sprigs of fresh mint.
