In the summer, our FAVORITE types of recipes are ones that can be put together last-minute, with minimal (yet deliciously fresh) ingredients. Sometimes, the plan is to have no plan, right?! In those instances when a spontaneous twilight bike ride or lingering trip to the wine & cheese bar leaves you hungry and ready for something satisfying, we turn to our favorites. One of which being – the appropriately named – Summer Garden Pasta.

Instantly, I’m sure you can guess what makes this pasta so good (and so summery). It’s the best make ahead recipe because 1) it’s limited ingredient list makes for a super simple prep before running out the door, and 2) the longer it sits, the better it’s going to taste.

Speaking of ingredients, since this recipe only features so many, you’ll want the best of the best on your side. We’re talking farm fresh tomatoes, possibly homemade pasta if you have the time to whip some up, and high-quality olive oil, like our personal fave, Brightland!

Take to the road less traveled and enjoy a brisk walk (bonus points for having great company)

Play a group game! Our summertime go-to is the strategy card game, Gubs.

Do something for YOU. Whether that’s taking a hot bath with a face mask, or sitting outdoors with a good book.

Pick up a new hobby. We love taking our bikes out to our favorite secret fishing spot and casting out a line. We’ve gotten pretty good at it too!

Summer Garden Pasta

Course Mains

Ingredients
  

  • 4 pints cherry tomatoes, halved
  • good olive oil
  • 2 tbsp minced garlic (6 cloves)
  • 18 large basil leaves, julienned, plus extra for serving
  • 1/2 tsp crushed red pepper flakes (we like an extra pinch)
  • kosher salt
  • 1/2 tsp freshly ground pepper
  • 1 lb dried angel hair pasta (this is not available GF, we use spaghetti)
  • 1 1/2 cups grated parmesan cheese

Instructions
 

  • Combine cherry tomatoes, 1/2 cup olive oil, garlic, basil leaves, red pepper flakes, 1 teaspoon salt, and the pepper in a large bowl. Cover with plastic wrap, and set aside at room temperature for 4 hours.
  • Just before you're ready to serve, bring a large pot of water with a splash of olive oil and 2 tablespoons of salt to a bowl and add pasta. Cook al dente according to the directions. Drain the pasta well and add to the bowl of cherry tomatoes. Add the cheese and some extra fresh basil leaves and toss well. Serve in big bowls with extra cheese on each serving.
