If we had to convince you of one recipe to try even though it seems a little odd at first glance, it would be these Roasted Tomatoes. Created by one of our cooking muses, Stanley Tucci, himself, the tomatoes boast savory saltiness with a hint of unexpected, sun-dried sweetness (even though they’re 100% roasted in the oven).
You might be asking yourself: how would I eat these? However you like! We’ve put these on pizza, eaten them as an appetizer, and enjoyed them as a tasty side. Personally, we love to pick at these whenever a need for something delicious and easy appears. Just an hour or so in the oven at 250 degrees and you have some raisin-like, jammy tomatoes perfect for snacking.

Stanley Tucci’s Roasted Tomatoes
Ingredients
- 8-12 Campari or cherry tomatoes, halved
- 2 tablespoons extra virgin olive oil
- Kosher salt and freshly ground black pepper
Instructions
- Preheat the oven to 250 degrees F.
- Place the tomatoes on a baking sheet, cut side up. Drizzle them with olive oil, season with salt and pepper.
- Bake for at least 1 1/2 hours, the longer the better.
