It’s All About Boards: Our Suggestions for the Perfect Antipasto Spread

We love making boards for so many reasons. They are handy on many occasions, and are a great way to flex our creative muscles. On a recent ski weekend we assembled a hearty board for an apres’ ski afternoon. After a full day of fresh air and vigorous exercise – we find ourselves looking for some satisfying nibbles. Enter the Italian Antipasto board.

Ahead of the weekend, we gathered an assortment of Italian cheeses and salamis. The perfect antipasto elements. Choosing aromatic Taleggio, semi soft Fontina, tangy Gorgonzola, and creamy Mozzarella. Our meat selection included Salami, Soppressata, Prosciutto, and Pepperoni. Rounding out the main event, we added buttery-sweet Calvestrano olives, cherry tomatoes on-the-vine, roasted sweet peppers, and an assortment of flatbreads and crackers.

Customizing your board to the size of the group is a breeze and  assembly takes no time at all (especially, if you take a few minutes in advance to cut the cheese into bite size pieces). In addition to saving time ahead of serving, this also makes the board easier for guests to navigate. Not only is the board simple and satisfying – it also makes for an impressive tablescape. At this point the scene is set. Light some candles, pour a glass of wine, relax and enjoy down time with family and friends.

Ingredients
  

The Cheeses
  • tallegio
  • fontina
  • gorgonzola
  • 16 ounces Cillegine size mozzarella balls
The Meats
  • salami
  • soppressata
  • prosciutto
  • pepperoni
  • calvestrano olives
  • cherry tomatoes, on-the-vine
  • whole grain mustard
  • cornichons
  • flatbread & crackers

Instructions
 

  • Cut cheeses to preference. We mix it up with the soft cheeses as is, and then slice and cube the others.
  • Assemble the board to your preference, and enjoy!
