If you haven’t seen the trend of “Cowboy Caviar” on TikTok, Instagram…you name it…you may not know what this is about to be. The original version is a sort of scoop-able dip made with Southwestern ingredients for the perfect summertime snack. Paired with a bowl full of salty chips, you’ve got yourself the perfect one-pot appetizer. While the “Cowboy Caviar” recipe looked too good to pass up, we knew we needed to add our own Moments spin to it. And now, we have Coastal Cowgirl Caviar. Our take on the new cowgirl-by-the-beach trend – highlighting effortless, do-it-all comfort mixed with coastal style – and some local seaside, southern elements.

For example, we opted to add farm-fresh ingredients that brought the beauty of our summers by the beach to the forefront. Charleston peaches, farm-grown corn, fresh scallions, local honey, and ripe southern tomatoes. Chop everything up, mix it together, toss with the dressing, and you’re done! We suggest getting some hearty chips to enjoy this recipe. The thin ones just aren’t going to do the trick. Make a big bowl-full, and your guests will thank you!

Coastal Cowgirl Caviar

Ingredients
  

For the Dressing
  • 1/2 cup rice wine vinegar
  • 1 tablespoon honey
  • 1 tablespoon dijon mustard
  • 1 shallot, minced
  • 1/2 teaspoon Kosher salt
  • 1/3 cup good olive oil
  • Kosher salt and fresh ground pepper to taste
For the Salad
  • 3 plum tomatoes, cored, seeded and small diced
  • 1 15-ounce can black beans, rinsed
  • 1 15-ounce can black-eyes peas, rinsed
  • 3 fresh peaches, small diced
  • 2 cups fresh, cooked corn kernels (from 4-6 cobs)
  • 1 red pepper, small diced
  • 1 jalapeno pepper, diced

Instructions
 

Make the Dressing

  • Combine the first five ingredients. Then slowly whisk in the olive oil. Add salt and pepper to taste.

Make the Salad

  • Add all of the ingredients to a medium bowl. Toss gently with the dressing. Enjoy with tortilla chips.
