Beach picnics are the quintessential celebrations of summer. They highlight all of the best parts of the season – local produce, fresh caught seafood, soft sand and warm ocean breezes. So, grab a basket or an insulated tote and start packing!

Our Favorite Summer Beach Picnic Ingredients

Tess and I like to combine a selection of cheeses and meats, fresh fruits, and vegetables into our picnic basket (or bag, in this case). Make ahead salads and roasted vegetables that can be portioned out ahead of time are also a great option! We love serving Stanley Tucci’s sweet and savory roasted tomatoes at room temperature. They’re easy to make, and even easier to pack. Another of our favorites is a classic chilled butter bean salad. In the case of butter beans, the combination of crisp celery and garlic-infused olive oil tossed with the beans is the perfect addition to a summer evening meal.

Slow roasted, flavor-loaded jammy tomatoes. A perfect side for a pasta or rice dish.

Ingredients
  

  • 8-12 Campari or cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • Kosher salt and freshly ground black pepper

Instructions
 

  • Preheat the oven to 250 degrees F.
  • Place the tomatoes on a baking sheet, cut side up. Drizzle them with olive oil, season with salt and pepper.
  • Bake for at least 1 1/2 hours, the longer the better.
