If you know anything about my mom and I, you know we’re wine drinkers – through and through. At this point, it’s more than just our evening beverage of choice…it’s a lifestyle (haha). But, it wasn’t until I opted to make Watermelon Mojitos with my girlfriends this past Fourth of July that I realized how GOOD a really well-made cocktail could be. Although wine will always hold the top spot in my heart, these cocktails really give rosé a run for its money. Hence: we’re drinking these mojitos all summer.
If you’re not a rum lover, or are staying away from alcohol, don’t fret! These cocktails are just as good alcohol-free…you just need the right substitute to take it’s place! Queue, our latest favorite NA rum of choice: Rumish!
No matter how you create these cocktails, the bottom line is that they’re delicious! Pureed fresh watermelon, homemade simple syrup (yes, homemade is the way to go), mint, and lime juice! It makes a frozen-adjacent, gently sweet, refreshing cocktail that really hits the spot. Plus, everyone that’s tried these has gone in for seconds…they’re really that good.
So, find yourself a pool, some sunshine, a porch – whatever works for you – and enjoy a glass of too-good-to-be-a-cocktail Watermelon Mojitos over ice.

Watermelon Mojitos
Ingredients
- 30 large, fresh mint leaves coarsely torn by hand
- 3-4 thick slices of fresh watermelon
- 12 oz light rum, such as Bacardi or NA rum, such as Rumish
- 1/2 cup homemade simple syrup
- 6 tbsp freshly squeezed lime juice (from about 3 limes)
- sprigs of mint, for serving
Instructions
- Crush the mint leaves lightly with the back of a spoon, to release the oils. Slice your watermelon into cubes and place in a food processor or blender. Purée.
- Add the mashed mint into a large pitcher with the 2 cups of puréed watermelon, the rum, simple syrup, and lime juice. Stir to combine.
- Pour over glasses filled with ice and garnish with sprigs of fresh mint.
