We know, we know…it’s not Mother’s Day anymore. But if you’re anything like us, celebrating the important women in your life can happen on any random day – and should!
So, this past Sunday, we celebrated the other half of the Moments team with a day of gardening, raclette, and F1 Grand Prixs! It was definitely a “Mom’s Day Off”, but only “off” on the boring stuff 😉
So, whenever you need a little pampering most, try this agenda on for size.
BREAKFAST
It wouldn’t be a “mom’s day off” celebration without the perfect breakfast. So, to start the day, we served Chia Seed Pudding with fresh squeezed orange juice and a hot cup of coffee! For moms who might be in charge of their own morning breakfast…this recipe is a great balance of fresh, satisfying, and simple…plus it’s a great make-ahead solution that takes about two minutes.
Chia Seed Pudding with Raspberries & Almonds
Ingredients
For the Pudding
- 1 cup vanilla-flavored unsweetened almond milk
- 1 cup plain low-fat Greek yogurt
- 2 tbsp maple syrup
- 1 tsp pure vanilla extract
- kosher salt
- 1/4 cup chia seeds
To Top
- raspberries
- 4 tsp maple syrup
- 1/4 cup sliced almonds, toasted
- honey, for drizzling
Instructions
- In a medium bowl, gently whisk the almond milk, yogurt, 2 tablespoons maple syrup, the vanilla and 1/8 teaspoon salt until just blended. Whisk in the chia seeds; let stand 30 minutes. Stir to distribute the seeds if they have settled. Cover and refrigerate overnight.
- The next day, prepare your toppings. In a medium bowl, toss the raspberries with the 4 teaspoons maple syrup. Mix in the almonds. Spoon the pudding into bowls or glasses. Pour the berry mixture overtop and serve. Drizzle with honey to finish.
Lunch Time
In the past few years, we’ve transitioned our Mother’s Day to be a LOT more chill. It was over quarantine that my mom decided she wanted to spend her day gardening, cooking, and enjoying home…so that’s what we do! Truly, the transition away from dressing up and getting brunch was the best decision we’ve made as a group…the day is so much more relaxed now (and the focus is back on mom!).
In keeping with that plan, after breakfast we were off to grab cages for our tomato plants, which we couldn’t wait to get into the ground (keep an eye out for an upcoming post on container gardening tips…highlighting what we’ve learned a year later!).
Lunch is no-fuss since we’re going to be busy planting! Although we rarely order out…Sunday called for a quick sandwich so we could get working!
Dinner
For dinner, it’s all about our latest favorite “no-cleanup” cleanup meal…raclette! We’ve posted about this before (and will be posting about it again), but it’s always such a blast. Through working for a French food & wine agency, I learned about this phenomenon and we’ve been hooked ever since. If you’re a fan of pouring melted cheese DIY-style over potatoes, onions, prosciutto, and any veggies of your choosing, you’re going to love this.
(and, you guessed it, a full post on how to summer-ize your raclette is coming soon!)
Eating this after tuning into the Formula One Miami Grand Prix was a recipe for success…literally!
Finally, this day is all about your mom, the moms in your life, or yourself…so do whatever feels right to you! But, if we can instill anything about how we celebrated our Sunday, it was pretty great and we definitely think you should give it a try!
