If you love sushi, this flavor-packed poke bowl will be your weeknight go-to. The ingredients are traditional for poke. Sushi rice, a simple marinade for the tuna, a quick cucumber salad, and a spicy mayo to drizzle over the bowl.

To make this it’s best – marinate the tuna, cook the rice (letting it come to room temperature), and make the cucumber salad in advance. Then simply assemble the tuna and crispy cucumber salad over the rice, and top with the spicy mayo. We love this super simple version, but feel free to add in anything you like. It’s all good!
