Diavolo (Devil’s!) Pizza

Pizza is hands down our Friday night go-to. It’s low-key fun, and simple to prepare. We’re pretty proud of our extensive pizza repertoire. So, to say this is Kim’s favorite is saying a lot

The prep is straightforward. First, bring the premade pizza dough to room temperature (we also have  a GF recipe), then roll it out in a sheet pan (we use a drinking glass for this step), and cover with plastic wrap and a kitchen towel to rise. Meanwhile, preheat the oven. 

Next, prep the ingredients. In this case it’s a short list. Red onion, spicy pizza sauce (we love Carbone’s!), spicy salami, and shredded mozzarella. 

Pop it in the oven for a quick 10-15 minutes until the crust is golden. To finish, add a sprinkle of Parmigiano Reggiano and crushed red pepper. Enjoy!

Ingredients
  

  • extra virgin olive oil
  • fresh pizza dough
  • 1 medium red onion, halved and thinly sliced
  • 6 ounces pizza sauce *We prefer Carbone's spicy pizza sauce (if you use this, skip the Calabrian chili peppers step).
  • 2 teaspoons Calabrian chilis
  • 3 ounces spicy salami
  • 8 ounces shredded mozzarella
  • Parmigiano Reggiano, for sprinkling
  • crushed red pepper, to taste

Instructions
 

  • Bring the pizza dough to room temperature if it's frozen.
  • Place oven rack in the top third of the oven. Preheat to 500℉.
  • Lightly spread olive oil on pan.
  • Roll out the pizza dough. We use a drinking glass that we've rolled in the olive oil on the pan. The dough won't stretch to the edges yet. Cover with plastic wrap and let rise in a warm area (covering with a kitchen towel helps).
  • Once the dough has become more pillowy, gently push to the edges of the pan. Then, remove the plastic wrap.
  • Add Calabrian chili peppers to the sauce, and mix well. Then, spread all over the dough. Add the onions, mozzarella, and spicy salami (in that order).
  • Place in the oven and cook 10-15 minutes until the crust is golden.
  • Enjoy!
