When you think of entertaining in the fall, what comes to mind? Nothing, right? Exactly! That’s because fall is wholeheartedly not the time for entertaining of any kind – unless you’re entertaining yourself. With the falling leaves, cooling temperatures, and warm sweaters on the horizon, this time of year isn’t built for anything outside of feeling cozy and curling up with a good book. So, here comes my suggestion to you: take the hint and host yourself! You’ll have plenty of time for blowout events and dinner party extravaganzas come the holidays. But for now, close the front doors, rescind the invites, and ask yourself what you want to eat tonight.
Surprise, surprise, though, I have some options for consideration!
Firstly, I suggest setting a little tablescape for yourself. After all, who is a more esteemed guest to dine in your home than you? Light a candle, pull out some nice flatware, and make sure it looks *chefs kiss*. You’ll thank yourself later.
Secondly, time to see what you’re wanting to eat. Although our website has a million and a half offerings for delicious meals on the fly, I have a couple that really scream “luxury for one”. After all, this isn’t about eating leftovers and calling it a day. You want to do something that would be just as impressive for a guest. I’m talking steak, a chicken and rice bake, or a flavorful pasta. If you wouldn’t make it for company, it’s not good enough for you!
Here are my thoughts:
- Pan-Seared Ribeye with Rosemary and Garlic
- One-Pot Cheesy Zucchini Chicken and Rice Bake
- Chipotle Chicken Sweet Potatoes
- Spicy Mint Beef
Now you might be wondering: Tess, why these three? When you bite into each – whether you’re in the mood for a nice steak, a warm, cheesy & satisfying bake, a scoop of savory, sweet Chipotle sweet potato skins, or a spicy & fresh meat and rice bowl – they’re all SO delicious, so cozy, and perfect for an evening solo. They’re all some of my favorite recipes, and I know you’ll love them too. Plus, great leftovers if you’re looking to go for round two the next night.
Cheers!
