A caprese salad with the ultimate hint of summer — fresh strawberries. Originally, this recipe only included cherry tomatoes and a classic balsamic, but after we realized we were short on some ingredients, we turned to a pantry-staple strawberry champagne balsamic. That was the beginning of a beautiful ending for this recipe!
From there, we said: why not take it a step further? Strawberry champagne balsamic is CLEARLY calling for fresh strawberries and some farm-fresh basil. So, that’s where we landed!
There’s an extra burst of summer in this recipe that is perfect for these warm, humid months. Paired with cherry-sized mozzarella and a bit of good olive oil, every bite will make it feel like you’re sitting under the sun! Enjoy.
Tomato and Strawberry Caprese Salad with Strawberry Champagne Balsamic Drizzle
Ingredients
- 3 pints cherry tomatoes
- 1 pint in-season strawberries, sliced in quarters
- 2 tablespoons good olive oil
- 3-4 tablespoons Strawberry Champagne balsamic vinegar
- 1 tub Fresh Ciliegine mozzarella (cherry size)
- fresh basil, torn
- sea salt to taste
Instructions
- Slice cherry tomatoes in half, quarter strawberries and add to a bowl.
- Toss the tomatoes and strawberries in the olive oil and drizzle with balsamic. Sprinkle with sea salt.
- Add mozzarella. Sprinkle torn basil. Serve at room temperature.
