Tomato and Strawberry Caprese Salad w/ Strawberry Champagne Balsamic Drizzle

A caprese salad with the ultimate hint of summer — fresh strawberries. Originally, this recipe only included cherry tomatoes and a classic balsamic, but after we realized we were short on some ingredients, we turned to a pantry-staple strawberry champagne balsamic. That was the beginning of a beautiful ending for this recipe!

From there, we said: why not take it a step further? Strawberry champagne balsamic is CLEARLY calling for fresh strawberries and some farm-fresh basil. So, that’s where we landed!

There’s an extra burst of summer in this recipe that is perfect for these warm, humid months. Paired with cherry-sized mozzarella and a bit of good olive oil, every bite will make it feel like you’re sitting under the sun! Enjoy.

Tomato and Strawberry Caprese Salad with Strawberry Champagne Balsamic Drizzle

Ingredients
  

  • 3 pints cherry tomatoes
  • 1 pint in-season strawberries, sliced in quarters
  • 2 tablespoons good olive oil
  • 3-4 tablespoons Strawberry Champagne balsamic vinegar
  • 1 tub Fresh Ciliegine mozzarella (cherry size)
  • fresh basil, torn
  • sea salt to taste

Instructions
 

  • Slice cherry tomatoes in half, quarter strawberries and add to a bowl.
  • Toss the tomatoes and strawberries in the olive oil and drizzle with balsamic. Sprinkle with sea salt.
  • Add mozzarella. Sprinkle torn basil. Serve at room temperature.
