Gluten-Free Garlicky White Spinach Pizza

Sometimes, we’re in the mood for a pizza that has a bit of a *lighter* touch. That’s where this Garlicky White Spinach Pizza comes from. The brainchild of our very own, Kim, this pizza is thin, bright, and almost flatbread-like. The flavors are herby (and garlicky, of course), yet still comfortingly cheesy. A bite of this feels like you’re biting into the lightest and more fulfilling slice you may ever try. Plus, if you like a bit of spice, we sprinkled some red pepper flakes on at the end and really enjoyed the final product. Just that hit of heat really brought the entire recipe over the edge.

But for this Garlicky White Spinach Pizza recipe in particular, we opted not to let it rise too much since we wanted that slimmer bite. And we think we nailed it!

Gluten-Free Garlicky White Spinach Pizza

Equipment

  • 1 sheet pan
  • 1 8 ounce drinking glass

Ingredients
  

  • 1 pound gluten free pizza dough (recipe below)
  • 1/2 cup good olive oil
  • 6 cloves garlic, chopped
  • 4 ounces baby spinach
  • 6 ounces crumbles feta cheese
  • 8 ounces shredded mozzarella
  • 1/4 cup parmesan reggiano
  • 2 teaspoons sea salt
  • 1 red bell pepper, sliced thin (optional)
  • 2 tablespoons olive oil (for sheet pan)

Instructions
 

  • Move oven rack to the top 3rd of the oven. Preheat the oven to 500℉.
  • Heat the 1/2 cup oil over medium-low and add the garlic. Make sure to pull it off the heat before it begins to brown.
  • Spread 2 tablespoons of the olive oil on the sheet pan making sure to rub it on the sides of pan. Set aside.
  • Rub the glass around in the oil on the sheet pan.
  • Place dough on the pan and use the glass to spread it to the edges.
  • Brush the olive oil and garlic mixture over the dough.
  • Sprinkle the dough with the sea salt then cover with spinach.
  • Add red bell pepper if desired.
  • Add shredded mozzarella, feta, and parmesan reggiano.
  • Place in the oven and cook for 15 minutes until the cheese is turning golden and bubbly.
